Here’s a super easy and delicious recipe that makes for a quick and hearty dinner. You can pretty much throw in any veggies you have in your fridge, like peppers, which always goes well with sausage. I added corn, mushrooms and onions and it was perfect!
- 1 onion
- Jar of tomato sauce
- Salt, pepper and seasoning to taste
- Cream (optional)
Heat up some olive oil in a large pan. Once heated, add minced garlic (as much as you like,) chopped onions and your mushrooms. Saute on medium-high heat until onions get soft and caramelized, around 5 minutes. Lower heat a bit and add your sausage. Continue to rotate the links until they are fully cooked. I don’t often cook links, so I’m not sure if this is the proper way to do this, but while in the pan I punctured them so the juices stayed in the saute and then transferred the links to a cutting board and cut into pieces. Place the cut sausage back into pan and add corn and simmer on low heat while you heat up your pasta sauce. Once the sauce is heated, add your saute, cream if you choose and seasonings, and let your sauce simmer on low heat so the favors can combine for about 10 minutes. Boil your pasta. Once plated you can add some parsley or parm cheese, my favorite. Also for some spice I add Siracha. Bon appetit!
