One of my favorite things to do on the weekends is to sleep in, slowly wake up with a nice, hot cup of coffee and whip up a delicious brunch! This past Saturday my boy friend and I made White Chocolate Chip Raspberry Waffles. They were super easy to make! The waffles were fluffy on the inside and had just the right amount of crunch on the outsides. Just how I like my waffles. The melted white chocolate chips were smooth and creamy with each bite and went perfectly with the tartness of the raspberries. We ate them with the classic Aunt Jamima syrup, but also my new favorite sweet spread, Hey Boo coconut jam. It’s rich and creamy and absolutely amazing on pretty much any thing. Toast, croissants, ice cream, fruits… I love it!
Ingredients:
- 2 eggs
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- raspberries (fresh or frozen)
- white chocolate chips (or whatever kind you like!)
Directions:
Preheat waffle iron. Beat eggs in large bowl until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Mix in the raspberries and chocolate chips. Then spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown and enjoy!
