With the help of Fillables Bakeware, you can pack lots of variety into any baked treat. Thanks to its innovative two-piece design, you can fill the inside of each individual cup with surprises like candy, pudding, brownie, chocolate chips… almost anything!
I decided to go with the classic funfetti and strawberry cake layers surrounded by a nice coating of vanilla (outside) and strawberry (inside) frosting, topped with sprinkles, covered in coconut, filled with Meyer lemon bar and another layer of coconut flakes, and finally garnished with a lemon twist. Think: strawberry lemonade + coconut confetti.
All you need is three mixes: one box funfetti, one box strawberry, and one box Meyer lemon bars. Follow the directions on the back of the boxes, but disregard the crust portion of the lemon bar instructions. Get baking! Once the cakes are done, let them cool. Proceed to scoop some of the baked lemon filling into each pocket for a zesty surprise that will break up some of the more intensely sweet flavors. Put the non-filled layer on top of the other. Then go crazy with frosting and decorating!
